This exceptional dark chocolate couverture is made from cocoa beans which are cultivated in limited quantities and harvested exclusively in one country (Tanzania). The cocoa beans are a blend of Criollo and Forastero beans, which combine to produce a dark chocolate which is intense and subtle, spicy and fruity, with acidulous notes. It is a creamy couverture with a hint of fruity tartness which lingers in the mouth. Use in mousses and for hot chocolate to obtain a robust flavour, a strong cocoa taste, and a less sweet end product. It's an ideal product for fine moulding, coatings, ganaches, garnishes, mousses, sorbets, and ice creams. These pistoles are round drops of pure chocolate, easy to melt or temper, weigh, and store, and a divine taste in recipes calling for chunks of chocolate. The pistoles are made using 100% pure cocoa butter and 100% natural vanilla.
