It's easy to work with, it sticks to the table so it is very reliable when you are moving a fondant sheet etc, you don't need to use powdered sugar or cornstarch with it, so the piece of fondant stays nice and soft, doesn't harden up that quick as when you are using the powdered sugar, it's very easy to clean and you can cut it in whatever shapes you want. As a bonus, it contains all the mess you make when decorate cakes in one place and you just wipe it up in 5 minutes afterwards :-)
I can't believe I've waited so long to buy one, but I am even thinking of buying a second one now!
